After posting the above message I turned off my macbook completely. That also now works, so I assume the same change to setting has resolved that. Having now come back and switched it on the default has changed to Outlook in Mail, Mail still appears to work as before and the Email feature is available in the mail merge, that problem now appears solved, thanks - plus previously I hadn't been able to send invitations to meetings from Calendar in Outlook.
